Potato & Ham Soup

Oh my word....this soup was AMAZING!!! I made this soup at my parents house today. My dad said it was the BEST soup he's ever had. Warning....I would not consider this clean eating, but if you watch your portion size, a bowl won't hurt you. Double the recipe if you are feeding a larger family or want to freeze some for later!!

- 3 1/2 cups peeled and diced potatoes
- 1/3 cup diced celery 
- 1/3 cup diced carrots
- 1/3 cup chopped onion
- 3/4 cup diced cooked ham (I bought a package of store bought diced ham)
- 3 1/4 cups chicken broth
- 2 tablespoons chicken powder
-  salt and pepper to taste
- 5 tablespoons butter
- 5 tablespoons flour
- 2 cups milk

Combine the potatoes, celery, carrots, onion, ham and water in a large pot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

Veggie, Ham & Cheese Egg Muffins

Veggie, Ham and Cheese Egg Muffin Cups are as tasty as a an omelet, but in a much cuter way. Plus it's totally acceptable to pick up and eat with your hands. And especially convenient because you can make a bunch at a time and keep them in the fridge for the week, or even pop in the freezer for when you need a quick breakfast on your way out the door on busy mornings!!

1 cup diced ham
1 cup (about 4 oz.) shredded cheddar cheese
12 eggs
1 bell pepper chopped
1 1/2 cups baby spinach
1 teaspoon sea salt
¼ teaspoon freshly ground black pepper
hot sauce (optional)

Preheat your oven to 350°F and coat a muffin tin with nonstick cooking spray.
Divide the veggies and ham between the cups in the muffin tin. Top each with a slightly heaping tablespoon of cheddar cheese.
Crack the eggs into a large bowl, add sea salt, and pepper, and lightly beat.
Divide the egg mixture evenly between the muffin cups. You'll need about ¼ cup of the egg mixture for each one, but it is easier to add about half of that at a time and let it soak down into the cups.
Bake for 20-25 minutes, or until eggs are set and top is lightly golden brown.
Delicious topped with some hot sauce!


Jack-o-Lantern Stuffed Peppers

What I love about this jack-o’-lantern stuffed peppers recipe is that it’s a festive twist on a savory dish that lets my family enjoy the holiday with a little less sugar. They’re a fun Halloween treat to prepare for your kids and something you can feel great about them digging into! The fun part is in carving the bell peppers, which act as edible jack-o’-lanterns. 

4 Orange Bell Peppers (sliced off tops & save, seeds removed)  
2 tsp olive oil 1 onion chopped  
2 cloves garlic chopped  
1 lb chicken breast cut into 3/4 pieces  
1 tsp chili powder  
1 tsp ground cumin dash of sea salt and pepper  
1 cup tomato sauce (homemade or jar) *I make homemade "sauce" 2 cups cooked quinoa  
1 cup black beans rinsed  
1 cup frozen corn  
5 tbsp fresh cilantro
1 tbsp lime juice  
1 cup shredded Monterey Jack cheese
Hot Pepper Sauce (optional, but DELICIOUS!!!)

 1. Preheat oven to 400 degrees

2. Carve your pumpkin face :)
3. Place bell peppers in a large baking dish, set aside
4. Heat olive oil in large skillet
5. Add onion and cook until tender
6. Add garlic and stir
7. Add chicken, chili powder, cumin, salt, pepper, and cook for 5 minutes or until chicken is no longer pink

8. Add tomato sauce, quinoa, beans, corn, cilantro and lime juice. Reduce heat to medium heat and cook for 3-5 minutes or until heated through.
9. Scoop chicken mixture to each pepper.  Top with additional sauce (optional)
10. Cover with foil.
11. Bake for 35 minutes.
12. Remove foil and top with cheese. Cook for 3 more minutes without foil.
13. Serve warm and sprinkle with Hot Sauce

14. Place the pumpkin's head on top!

What an incredible class we had. The room was crowded and the music was pumping Janet Jackson!! This routine was definitely a calorie burner. Slow Cooker Pineapple Pork Tenderloin

2 1-lb Pork Tenderloins
1 bag frozen pineapple
1 red bell pepper

1 yellow bell pepper
4 TBSP balsamic vinegar
4 TBSP apple cider vinegar
1 TBSP chili powder
2 TSP black pepper
2 TSP garlic powder
Add to the crockpot. Cook on low for 8 hours.
Serve over brown rice and top with soy sauce! (optional)

Slow Cooker Pumpkin Spice Oatmeal


Prep time: 15 mins
Cook time: 6 hours
Total time: 6 hours 15 mins

Serves: 8 servings
1 tablespoon Butter, softened
2 cups Steel Cut Oats
1 can (15 ounces) Pumpkin Puree
3½ cups Water
3½ cups Whole Milk
¼ cup Maple Syrup
¼ cup Coconut Palm Sugar
1½ teaspoons Vanilla
1 tablespoon Cinnamon
1 tablespoon Pumpkin Pie Spice
½ teaspoon Real Salt

Grease the inside of a crockpot with the softened butter.
Add remaining ingredients to the crockpot and whisk together until well combined.
Cover with the lid and cook on low for 6 hours.
Serve with toppings such as chopped pecans, sliced bananas, dried cranberries, diced apple.

Slow Cooker Sloppy Joes

Clean Eat Slowcooker Sloppy Joes for dinner. They have carrots and zuchini inside which gives it extra flavor!! My kids absolutely love it and so easy to make!! Great as leftovers too!

Prep time: 20 minutes
Cook time: 4 hours 20 minutes
2 lbs of Lean Ground Turkey
2/3 Cup Baby Carrots
1 Small Yellow Onion
2 Small Zucchini
2 1/2 cups Ketchup
1/2 tbsp Mustard, dried
1 1/2 tbsp Worcestershire sauce
1/4 cup Maple syrup
1 tbsp Chili powder
1 Salt & pepper
Whole Wheat Hamburger Buns
Turn on Crockpot to high and set aside. In a large skillet the, brown ground turkey over medium heat. 
While meat is browning, grate onion, carrots and zucchini using a food processor or a cheeses grater will work. Drain well and spoon meat into warmed Crockpot. Sprinkle with salt and pepper.
Replace pan to heat. Place veggies into the hot pan and sprinkle with salt and pepper. Saute until the water from the veggies has evaporated and are tender, about 7 minutes. 

Pour in Crockpot.Whisk all remaining ingredients in the skillet until smooth about 5 minutes, then pour in crock pot coating evenly. Cover and cook 3-4 hours on low.

Serve on whole wheat buns. Pickles on the side optional.

Slow Cooker Santa Fe Chili

Slowcooker Chicken Chili

Super easy Crockpot Chicken Chili!! This dinner is super yummy and very easy to throw in the crockpot and go! It's the perfect hearty meal that the entire family will love!!

1 onion, chopped
1 green pepper, chopped
1 28oz can Petite Diced Tomatoes
1 28oz can Tomato Sauce

1 6 oz can Tomato Paste
4 cloves of garlic
1 15oz can Sweet Corn (drained)
1 15oz can Black Beans (rinsed)
1 package Taco Seasoning
2 tbsp Chili Powder

4 Chicken Breasts
Shredded Cheddar or Mexican Cheese 

Combine everything in the crockpot in the morning and cook on low all day! About 30 minutes before serving shred the chicken and put back in to let cook a little longer.
Top with some Mexican cheese and/or plain Greek yogurt!


KIDDIE Cobb Salad

Tired of making sandwiches every day? Try making a KIDDIE Cobb Salad!! I used my containers that I ordered from Amazon. My kids love seeing the little animal toothpicks, storage container for the salad dressing and colorful cupcake holders for the blue cheese and whole wheat crackers. Making lunch FUN!!

Apple Crisp

Seriously.....this was THE most amazing clean eat snack!!! I could eat this all day!! Tastes just like a taffy apple!!! Great as an after school snack or even as a dessert for a party!! 

- 1 large honey crisp apple
- 1/2 lemon (optional)
- 2 tablespoons peanut butter
- 2 tablespoons Maple French Toast granola
*Note.....I got my Maple French Toast Granola from Aldi. 

1. Use an apple core or melon ball to remove the apple's core.
2. Cut 1/2 inch off of the top and bottom of the apple. Cut 2 slices.
3. To keep the apple from turning brown, rub the cut side of the lemon over both sides of the apple.
4. Spread peanut butter on two of the apple slices. Sprinkle the granola over the peanut butter. 
5. Top with remaining apple slice or eat individually.

Country Style Eggs

 This recipe was a hit!!! If you love eggs, but want to mix it up a bit, then give this recipe a try!! You can also give it some kick by adding hot sauce.

- 1/2 green pepper chopped
- 1/4 onion chopped
- 1 small sweet potato
- 1 or 2 eggs
- salt, pepper, garlic salt
- 1 piece whole wheat toast (optional)

- wrap potato in a damp paper towel.
- cook sweet potato in microwave for 3 minutes, then cut into cubes (may be soft)
- saute peppers & onion on medium heat
- sprinkle seasonings on top
- after veggies soften, add potatoes and saute

- move veggies onto a plate and cook egg over easy
- place egg on top of veggies
- whole wheat toast is delicious on the side!

Slow Cooker Hawaiian Pineapple Chicken

Hawaiian Pineapple Chicken is ooooh so good!!! If you love pineapple, you need to give this slowcooker recipe a try!!  It tastes even better the next day after all the chicken is soaked over night in the pineapple juice. 🍍Tastes delicious by itself or with brown rice!! Like a little salt with your sweet? Try it with soy sauce! 

- 2 lbs chicken breast
- 1 pepper (I used 1/2 red, 1/2 yellow)
- 1 15 oz can pineapple with juice
- 1 jar salsa (I used 1 small container fresh from the deli counter)

1. Spray crock pot with oil.
2. Place chicken in the crockpot.
3. Slice peppers thin.
4. Add remaining ingredients in the crockpot. Include the pineapple juice for extra flavor. (optional to drain)
5. Cook on high for 3 hours or low for 6.

Cheeseburger Stuffed Zucchini Boats

I can have a cheeseburger? Without feeling guilty? Yes!!  These stuffed zucchini boats are a perfectly clever way to have a bunless burger! So filling too!! You get all the taste of a burger packed into a zucchini squash!!

21 Day Fix  
*1 red
*1 1/2 green
*1 blue

*4 Medium-Large Zucchini
*1 Lb. Extra Lean Ground Beef
*1 small yellow onion, chopped
*1 Garlic Cloves, Minced
*6 Oz. Tomato Paste (No salt Added.)
*1/4 C. Water
*1/4 C. Dill Pickles, Chopped
*1 Tbsp. Yellow Mustard
*1/2 C. Reduced Fat 2% Sharp Cheddar, Shredded
*Salt & Pepper to Taste


1. Preheat the oven to 400 degrees F. and lightly coat the inside of a 13x9 baking dish with non-stick cooking spray. Set aside.
2. Bring a large pot of salted water to a boil.
3. Clean, cut the stems off of your zucchini and slice them in half. Using a spoon or melon baller, scoop out the pulp and flesh to leave about 1/4" thick 'shells'.  Reserve about 1/2 c. of the zucchini pulp. Chop and set aside.

4. Once your pot of water is boiling, place the zucchini into water and bring back to a boil.
Allow the zucchini to cook for 1 minute before removing to drain and cool.

5. Lightly coat a large skillet with non-stick cooking spray and brown your meat with your onions and garlic.

6. Once the meat is done, drain and add in the chopped zucchini, tomato paste, water, pickles and mustard.
7. Stir to combine and continue to cook over a medium heat until warm and bubbly. Season with salt and pepper to taste.

8. Remove the skillet from the heat and set aside.
9. Top each boat with about 1 tbsp. of cheese.

10. Cover with foil and bake for about 35 minutes.


Misty's Home Made Italian "SAUCE"

I am sharing my "secret" with you!! Typically Italians will not share their sauce recipe, but I'm happy to do so. It's tradition for Italian families to make their sauce on Sundays. Nothing better than smelling the aroma coming out from the kitchen. The key to a great sauce is all FRESH ingredients!!! Keep in mind, I "throw" ingredients in, I don't measure. :)

2 tablespoons EVOO (extra virgin olive oil)
2 cans crushed tomatoes (15 oz)
1 can tomato paste (6 oz)
1 yellow onion chopped
4 cloves of garlic chopped
fresh basil chopped (about 1 tablespoon)
fresh parsley chopped (handful)
1 teaspoon garlic salt 
sea salt & pepper to taste 

1. In a large pot, pour in olive oil. Cook onions for about 4-5 minutes on medium heat or until translucent. Add fresh garlic and stir.
2. Add 2 cans of crushed tomatoes. Fill up 1 empty can with water and pour into the pot. Stir.
3. Add tomato paste. Stir.
4. Add the rest of the ingredients.....basil, parsley, sea salt, pepper, garlic salt.
5. Bring the pot to a boil.
6. Reduce heat and simmer for 4 hours. Stir occasionally.
7. My favorite way to test my sauce is by dipping bread in it. :)



Chicken Parmesan Bites

Hello yumminess!! 😍😍 No doubt, you have to try this recipe!!! It will be a hit for dinner or as an appetizer!!! My family ate the entire plate in a matter of minutes at dinner tonight!!

*1 pound of boneless skinless chicken breast cut into 1 inch cubes
*1 cup Panko bread crumbs
* Two eggs beaten
* 1/2 cup grated Parmesan cheese
* 1 tablespoon Italian seasoning
* Half tablespoon Paprika
* Salt and pepper to taste
* Sprinkle of parsley for presentation

Preheat oven to 400°. Line a cookie sheet with foil and spray lightly with cooking spray. Crack and beat eggs in a small bowl. On a plate combine all dry ingredients except the planko bread crumbs (set aside).
Take the cut chicken and coat them in the egg then take the egg coated chicken and dredge them in the Panko mixture and place on cookie sheet.
Place the chicken so there is space between each of the pieces so they get nice and crisp. Cook for approximately 12 to 15 minutes. Sprinkle with parsley on the chicken and marinara sauce for a beautiful presentation & dipping!
