Jack-o-Lantern Stuffed Peppers

What I love about this jack-o’-lantern stuffed peppers recipe is that it’s a festive twist on a savory dish that lets my family enjoy the holiday with a little less sugar. They’re a fun Halloween treat to prepare for your kids and something you can feel great about them digging into! The fun part is in carving the bell peppers, which act as edible jack-o’-lanterns. 

 INGREDIENTS:  
4 Orange Bell Peppers (sliced off tops & save, seeds removed)  
2 tsp olive oil 1 onion chopped  
2 cloves garlic chopped  
1 lb chicken breast cut into 3/4 pieces  
1 tsp chili powder  
1 tsp ground cumin dash of sea salt and pepper  
1 cup tomato sauce (homemade or jar) *I make homemade "sauce" 2 cups cooked quinoa  
1 cup black beans rinsed  
1 cup frozen corn  
5 tbsp fresh cilantro
1 tbsp lime juice  
1 cup shredded Monterey Jack cheese
Hot Pepper Sauce (optional, but DELICIOUS!!!)

 DIRECTIONS:
 1. Preheat oven to 400 degrees

2. Carve your pumpkin face :)
3. Place bell peppers in a large baking dish, set aside
4. Heat olive oil in large skillet
5. Add onion and cook until tender
6. Add garlic and stir
7. Add chicken, chili powder, cumin, salt, pepper, and cook for 5 minutes or until chicken is no longer pink


8. Add tomato sauce, quinoa, beans, corn, cilantro and lime juice. Reduce heat to medium heat and cook for 3-5 minutes or until heated through.
9. Scoop chicken mixture to each pepper.  Top with additional sauce (optional)
10. Cover with foil.
11. Bake for 35 minutes.
12. Remove foil and top with cheese. Cook for 3 more minutes without foil.
13. Serve warm and sprinkle with Hot Sauce

14. Place the pumpkin's head on top!
