Sweet Potato Brownies

 

Two of my favorite things in the world are sweet potatoes and chocolate. And guess what? When you combine the two, they create the most decadent and guilt-free brownies ever! 


I decided to put a healthy spin on the classic chocolate-lovers treat and I must say that mine are just as delightful. Rich in flavor, but also packed with healthy fats, fiber, and Vitamin A! To cook the sweet potato, pierce it with a fork, wrap in a damp paper towel and place in microwave for 3:00 minutes. Cook until soft.  I hope you like these as much as I do! 

Total Time: 35 min

Prep Time: 10 min

Cook Time: 25 min

Ingredients:


  • 3 eggs
  • ¼ cup maple syrup
  • ½ cup melted coconut oil
  • ¾ cup almond meal
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1 pinch sea salt
  • 1 cup cooked sweet potato
  • 1/4 cup chocolate chips for topping



Directions:


  1. Pierce potato with a fork and wrap in a damp paper towel. Cook sweet potato in the microwave for 3:00 minutes or until soft.
  2. Using an electric hand mixer or stand mixer, whisk together the eggs, syrup, and coconut oil until well combined.
  3. In a separate bowl, combine almond meal, cocoa powder, baking powder, and salt.
  4. Slowly add the dry ingredients into the wet.
  5. Add the sweet potato and mix until well combined.
  6. Pour brownie batter into baking pan and bake for 22-30 minutes, or until an inserted toothpick comes out clean. (I have a super hot oven that cooked them in 22 minutes!)
  7. Remove from oven, let cool for a few minutes, top with chocolate chips, then let the masterpiece cool completely before cutting!
  8. Try not to eat the entire pan at once!

Nutrition Plan

80 Day Obsession follows a timed nutrition plan to optimize muscle performance and recovery.
You’ll get to eat small frequent meals- which means you'll never go longer than 3 hours without eating (yay!). More importantly, you'll have a 6-hour workout block. 
You'll have a preworkout meal one hour before you work out then you’ll drink your Energize 15-20 minutes before your workout. 
Then you’ll have your post-workout Recover within an hour of your workout and enjoy your post-workout meal within 2 hours of your workout. After that you'll eat every 2.5 to 3 hours {my kinda schedule!}!

You will be totally prepared to rock it!

Slowcooker Kale Soup



Slowcooker Kale Soup for dinner tonight!! So delicious and kids loved it too!! 🥣❤️

Ingredients:
2 boxes vegetable broth
2 (14.5 ounce) cans white beans, rinsed and drained
2 cans diced tomatoes drained
1/2 onion, unchopped
3 cloves whole garlic cloves
2 teaspoons kosher salt
1 teaspoon ground black pepper
2 bunches kale, torn into small pieces
2 carrots, chopped, or more to taste
1/4 teaspoon dried oregano
*I added Wylers chicken powder for my flavor!

Directions:
Combine the vegetable stock, beans, onion half, garlic cloves, salt, black pepper in a slow cooker; cook on Low for 8 hours.

Remove and discard the onion and garlic.
.
Switch slow cooker to 'high' setting. Add the pasta to the stock mixture. Stir the kale, celery, carrots and chicken powder/cubed into the soup; cook until the carrots are tender, about 30 minutes to 1 hour more.

Ingredients:
~ Bob Evans Pork Sausage
~ 9 eggs beaten slightly
~ 3 c milk
~ 1 1/2 tsp dry mustard
~ 1 tsp salt
~ 3 slices white bread cubed
~ 1/2 c cheddar cheese
~ 1/2 c swiss cheese
*Feel free to add any veggies you love!

Directions:
Brown sausage....drain
Combine next 4 ingredients in bowl
Add sausage
Pour in pan 13x9 inch pan
Add bread cubes and cheese
Cover and have it sit overnight in the refrigerator.
Next day, bake for 1 hour at 425 degrees

Deconstructed Cabbage Rolls

Deconstructed Cabbage Rolls


I made this tonight and my family ate it up like no other! I love cabbage rolls, but they can take too much time to make.  This recipe was fast to prepare and limited ingredients were needed.  My family and I were all surprised at how tasty this meal was.  Everyone had seconds! I highly suggest sprinkling parmesan cheese on top. 

Ingredients:
2 lbs ground turkey
1 tbsp olive oil
1 large onion (chopped)
1 garlic clove - mined (or more if you wish)
1 cabbage (chopped)
1 large can (28oz) low sodium diced tomatoes
1 can tomato sauce (8 oz)
3/4 cup water
salt/pepper to taste

Directions:
1. Brown meat, onion and garlic in olive oil
2. Add cabbage, tomatoes, sauce, 1/2 cup water (stir)
3.  Add salt and pepper (I use sea salt)
4  Cover and simmer for 30 minutes until cabbage is tender
 *Note...it may look like there is too much cabbage.  It will eventually wilt.  Give it time.  The cabbage will also release water.


Turkey Soup

Here's a healthy hearty turkey soup made with Thanksgiving leftovers. I plan to make this with chunks of baked turkey--not ground. Kale, brown rice and olive oil make this a filling, guilt-free bowl.

One of the stay-trim tricks Giada uses is that when she orders in a restaurant, she asks for half of the portion on her plate and the remainder in a take-home container.

“Everything in moderation,” she says. “I know that’s really hard for people to understand, but I... grew up in an Italian family where we didn’t overdo anything. We ate pasta, yes, but not a lot of it. Pasta doesn’t make you fat. How much pasta you eat makes you fat.”

Turkey, Kale, and Brown Rice Soup
Serves 4
.
2 tbsp. extra-virgin olive oil
5 large shallots, chopped
3 medium carrots, peeled and cut into ½-inch pieces
1 large red bell pepper, cut into ½-inch pieces
8 oz. ground white turkey meat, broken into small chunks
1 tbsp. herbes de Provence
5 cups low-sodium chicken broth
1 (15-oz.) can diced tomatoes, drained
1 cup cooked brown rice
1 small bunch (4 packed cups) kale, center ribs removed, leaves coarsely choppedepper
1 tsp. salt, divided
¼ cup chopped fresh flat-leaf parsley leaves
¼ cup grated Parmesan cheese
.
1. In a large pot over medium-high heat, heat oil, then add shallots, carrots and bell pepper. Stir frequently until vegetables begin to brown and soften slightly, 8-10 minutes.
.
2. Add turkey and stir until the meat turns white and begins to color very slightly around the edges, 5-7 minutes. Add herbes de Provence and stir for 1 minute.
.
3. Add broth, diced tomatoes and cooked rice, and bring to a boil. Stir in kale, then season with black pepper and ¼ tsp. salt.
.
4. Reduce the heat to medium-low. Cover and simmer until vegetables are tender, about 15 minutes. Season with the remaining ¼ tsp. salt.
.
5. Ladle the soup into bowls. Sprinkle each serving with parsley and Parmesan cheese.

Italian Sausage & Pasta

This was sooo delicious, my hubby and 2 other kids ate it all while I was at cheer practice last night. Guess I'll be making it again! Lol 
.

Ingredients:

1 lb sweet Italian sausage
Whole wheat pasta
Asparagus
Cherry tomatoes
Olive oil, sea salt, pepper
.
Directions:

Boil pasta on the side. Slice sausage in chunks. Cook sauasage in pan with olive oil. In meantime, cook frozen bag of steamed asparagus in the microwave. Cut cherry tomatoes in half.
.
Throw in tomatoes and asparagus with cooked sausage.
.
Then add pasta. Mix to get in all the yummy flavors and add spices.
.

Dinner was delicious tonight!!! So much easier when you can just throw it all in a casserole dish and bake!! My kids loved it and of course hubby approved! ❤️


Ingredients:
- 1 lb ground turkey
- 2 peppers
- 3 cloves garlic, minced
- 2 cups cooked brown rice
- 1 jar (24 oz) Pasta Sauce or (21 Day Fix Cookbook sauce)
-  1 1/2 cups Shredded Cheese

  Directions:
 1.  Heat oven to 350 degrees
 2. Brown meat with peppers and garlic in large skillet, drain.
 3. Stir in rice, pasta sauce and 3/4 cup cheese.
 4. Spoon into a 2-qt casserole sprayed with cooking spray
 5. Top with remaining cheese.
 6. Bake 25 min or until heated through

Slow Cooker Shredded BBQ Chicken

This sandwich will MELT in your MOUTH!  Its a family FAVORITE and leaves my kids wanting MORE! 
This dish is awesome as a left over too!!

Ingredients
  • 1 (12 ounce) bottle barbeque sauce
  • 1/2 cup Italian salad dressing 
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce     

Directions:
  1. Place chicken in a slow cooker. In a bowl, mix the barbecue sauce, Italian salad dressing, brown sugar, and Worcestershire sauce. Pour over the chicken.
  2. Cover, and cook 3 to 4 hours on High or 6 to 8 hours on Low. 
    3. The last 30 minutes, shred chicken in crock pot with a fork. Let cook for 30 more minutes.  May want to add cornstarch to thicken.

     

Spicy Buffalo Tailgate Trail Mix

Football season calls for tasty snacks! Nothing says football watching party more to me than spicy buffalo chicken wings and a big bowl of chips. Well, why not mix the two together in one easy to make treat? Once you try this amazingly simple and spicy buffalo trail mix recipe, you’ll be hooked!

Step 1

Melt butter and mix in the hot sauce and seasoning salt. Add the cereal, pretzels and nuts in a large microwave safe bowl and pour the sauce over the ingredients and stir.

Step 2 

Microwave for 2 minutes then spread it out on a baking sheet.

Step 3


Spread out on a baking sheet and broil on high for 5 minutes, remove and stir and place back in oven for another 3-5 minutes until crispy.

Step 4


Let cool and serve up in cute cups!

 

Mexican Stuffed Shells



Aaaaa-mazing!!!! My kids loved this meal tonight. Even the neighbors came over and had to try some. They raved about this dish!!! Mexican stuffed shells are delish!! 
Ingredients:
1 lb. ground turkey
1 package low-sodium taco seasoning
4 oz. low fat cream cheese
12-15 jumbo pasta shells
1 cup salsa
1 cup taco sauce

Oikos plain yogurt 
Shredded Cheese
2 green onions (optional)



Directions: Preheat oven to 350°. In a frying pan cook ground beef; add taco seasoning and prepare according to package directions.   

Add cream cheese, cover and simmer until cheese is melted. Blend well. Set aside and cool completely.   
 While ground beef is cooking, cook the pasta shells according to directions; drain. Set shells out individually on cutting board/baking sheet so that they don’t stick together.

Pour salsa on bottom of 9×13 baking dish.  Stuff each shell with the meat mixture. Place shells in 9×13 pan open side up. 

Cover shells with taco sauce.  Cover with foil and bake for 30 minutes. 
After 30 minutes, add shredded cheese and bake for 10-15 more minutes.   Serve with Oikos yogurt on top and/or more salsa. 


Egg Hash

Ingredients:
- 2 eggs
- 1/2 sweet potato
- 1/2 onion
- 2 slices deli ham 
.
Directions:
First, wrap potato around a damp paper towel. Cook sweet potato in the microwave for 3 minutes. 

Spray pan with olive oil. Cook onions on medium heat. Add diced ham. Next, add cooked sweet potato and mix together. Place on  a plate.

Then, top the hash with 2 cooked eggs over easy.

Chicken Enchilada Soup

Chicken Enchilada Crockpot Soup...clean eating recipe!!
 

 I am a huge fan of Mexican food and as we all know it is not low in calories and fat!  So I am constantly searching out recipes that will satisfy that fix!  Here is one I stumbled upon online!
I made enough for the rest of the week and pre portioned it out in tupperware containers and now I have quick easy meals for the rest of the week!  Planning is key to your success!!

INGREDIENTS:
1 pound chicken breast
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce

1 can black beans (drained, rinsed)
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro



DIRECTIONS:

Place chicken, tomatoes, enchilada sauce, beans, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with chili powder, salt, pepper, and bay leaf. 

Stir in corn and cilantro. 
Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
*Shred chicken and place back in the crock pot. 

Chicken Noodle Soup

  
Living in Chicago in the winter requires a nice, HOT SOUP for a meal!! This recipe definitely hit the spot!! Adding the chicken powder gave it a lot of flavor.  You can add whole wheat crackers for some crunch!  Your family will love it and it's great for lunch the next day!

 Ingredients:

- 2 Large Chicken Broths (32 oz each)

- 3  chicken breasts 


- 2 medium carrots, sliced

- 2 celery stalks, sliced

- 1 medium onion, chopped

- 4 garlic cloves, minced

- 2 tbsp fresh parsley, chopped

- 1 tbsp Wylers Chicken Powder

- 2 cups whole wheat pasta, bow tie (uncooked)

- salt/pepper to taste

- tbsp olive oil


Directions:

1.  Add the onion, carrots, parsley, chicken, celery, garlic, olive oil, chicken broth salt, pepper, chicken powder to your crockpot. Cook on low for 7 hours or 4 hours on high.
2. Remove chicken and either cut into pieces or shred with a fork. Add chicken back to the crockpot and add pasta (uncooked). Cook for another hour on high or until noodles are cooked. *If you don't want to wait 1 hour for the noodles to cook in the crockpot, you can cook the pasta on the side and just throw in the crockpot. 
3. Garnish with parsley. 


21 Day Fix serving = 1/2 green container, ½ red container, 1/2 yellow
