As an athlete at a Big Ten school, I was in the best shape of my life. At the Universty of Iowa, our teams were very well respected. We had the best of the best when it came to our athletic trainers.
On the dance team, we would train hard 5 x a week for hours, plus games and events. We conditioned every day, had our body fat taken twice a month, daily weigh ins and set goals. When preparing to compete for Nationals, that's when we upped our game with "hell weeks".
Then u graduate....start a career....become a parent.... and lose all sight of good health. You think you can never be in "great shape" again.
I am proof that you CAN feel like an athlete again.
Athletes have something deep inside them - a desire, a dream, a vision. They have the skill and will.
Start a new chapter in your life. Set the vision and go for it.

Hawaiian Chicken Kabobs

This dinner is a treat to your taste buds!!! You will love the light sweetness of these paired with the pineapple, bell peppers and red onion. And the chicken turns out perfectly flavorful and tender thanks to the simple marinade. Yes, preparing the kabobs can take a little time, but it’s well worth it!!!  These kabobs are a crowd pleaser. Bring on that island feel tonight and get out and grill some of these island inspired kabob!


  • 1/3 cup ketchup
  • 1/3 cup packed brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup pineapple juice ( I used juice from a can of pineapple)
  • 4 Tbsp olive oil, divided, plus more for brushing grill
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves, minced
  • 1 tablespoon Hoison Sauce
  • Salt and pepper
  • 2 large boneless, skinless chicken breast, chopped into 1 1/4-inch cubes
  • 3 cups fresh cubed pineapple
  • 1 bell pepper of each (red, yellow, orange) cut into 1 1/4-inch pieces
  • 1 large red onion, cut into 1 1/4-inch pieces 
  • Directions
  •  In a mixing bowl whisk together ketchup, brown sugar, soy sauce, pineapple juice, 2 Tbsp olive oil, rice vinegar, garlic, and Hoison sauce. Stir in 3/4 tsp pepper and season with salt if desired. Place chicken in a gallon size resealable bag. Reserve 1/2 cup of the marinade in refrigerator then pour remaining marinade over chicken. Seal bag and refrigerate 3 hours (meanwhile soak 10 wooden skewer sticks in water for 1 hour).  
  • Preheat a grill over medium heat to 400 degrees. Meanwhile, drizzle remaining 2 Tbsp olive oil over red onion, bell pepper and pineapple and toss. Season red onion and bell peppers with salt and pepper, then thread red onion, bell peppers, pineapple and chicken onto skewers until all of the chicken has been used. Brush grill grates with olive oil then place skewers on grill. Grill 5 minutes then brush along tops with 1/4 cup of remaining marinade. Rotate to opposite side and brush remaining 1/4 cup of marinade on opposite side and allow to grill about 4 minutes longer, or until chicken is fully cooked.  Serve warm.

Life Changes in just 3 Short Years...

It's truly amazing how much my life has changed in just 3 short years. I am the same person, but I have a whole new outlook on life.
On the left, I was uncomfortable in my own skin, tired, unhappy with work and wore ugly clothes because nothing fit or looked cute on me anymore.
Now I am in the best shape of my life since college, running my own business from home, able to spend more time with my kids, traveling on free vacations, more energy, overall happier mood.
My advice for you is this.....don't settle.
I thought I would have the "muffin top" the rest of my life because I had the excuse of giving birth to three kids. I thought I would be a 4th grade teacher forever because I was "supposed to". It's what I got my degree in.
Do what is going to make YOU happy. It's never too late for another chance at life.

BBQ Shrimp Wrap

BBQ Shrimp Wrap
 BBQ Shrimp Wrap.....yummy!!!! I threw this low cal meal together tonight for dinner and it was delicious!!! The tangy, sauce I mixed was the bomb!!
- shrimp (already pre-cooked in the package)
- romaine lettuce
- feta cheese (or your choice)
- whole wheat tortilla
- sea salt/pepper
*Mrs Dash is salt free if you prefer.
-Sweet Baby Rays bbq Sauce
- Marzetti Sweet Italian Salad Dressing (I prefer Marzetti, but didn't have it on hand

 -Heat pan with non-stick spray. Place shrimp in the pan. Spray the shrimp with non-stick spray and lightly season with sea salt and pepper. Toss shrimp until warm. Don't cook too long. I do about 2 minutes on each side.

- Lighly spray the wrap with non-stick spray. Place in pan and heat on both sides. Remove and set aside.

-In a separate bowl, mix 2 tbl of Italian dressing with 2 tbl of bbq (or eyeball it and make as much as you need). I did not have Marzetti Sweet Italian dressing on hand, but that is what I prefer.
- Place lettuce on top of whole wheat tortilla. 
- Next, add shrimp and sprinkle the feta cheese.
- Drizzle your sauce on top of your shrimp. 
- Wrap it up and EAT! Enjoy while the shrimp is warm!

Turkey BLT

Turkey BLT.....21 Day Fix Approved!
My kids and I had this for lunch and LOVED it! It was something different than just peanut butter and jelly. They were mad when I topped it off with Greek yogurt, but then took a BITE and said "Mom, it's sooo good!!".  It's much better than using mayo. This will be a once a week lunch for us this summer!
-Whole Wheat Bread
- Oikos Plain Greek Yogurt
- Turkey Bacon
- Turkey Slices
- Provolone Cheese
- Lettuce
- Tomato
- pepper to taste

- Toast the bread lightly in the toaster.
-Place turkey, bacon, cheese, and lettuce on top on the bread.
-Spread yogurt across the sandwich
-Top with tomato and sprinkle with pepper
-Fold in half or top with another piece of bread.
*Avocado would be another healthy fat to spread of top off your sandwich with. Enjoy!

Deconstruced Cabbage Rolls

Deconstructed Cabbage Rolls

I made this tonight and my family ate it up like no other! I love cabbage rolls, but they can take too much time to make.  This recipe was fast to prepare and limited ingredients were needed.  My family and I were all surprised at how tasty this meal was.  Everyone had seconds! I highly suggest sprinkling parmesan cheese on top. 

2 lbs ground turkey
1 tbsp olive oil
1 large onion (chopped)
1 garlic clove - mined (or more if you wish)
1 cabbage (chopped)
1 large can (28oz) low sodium diced tomatoes
1 can tomato sauce (8 oz)
3/4 cup water
salt/pepper to taste

1. Brown meat, onion and garlic in olive oil
2. Add cabbage, tomatoes, sauce, 1/2 cup water (stir)
3.  Add salt and pepper (I use sea salt)
4  Cover and simmer for 30 minutes until cabbage is tender
 * may look like there is too much cabbage.  It will eventually wilt.  Give it time.  The cabbage will also release water.
