Clean Eating Zucchini Lasagna

Zucchini Lasagna



This is seriously one of my favorite meals! It's comfort food at it's finest but healthy! The whole family really loved this dish and it's now one of my new favorites. I totally encourage you to make this but of course use good portion control and pair it with a salad.
So here is how you make it ....


  Ingredients:
  • 1 onion finely chopped
  • 1 lb of lean ground turkey
  • Sea Salt and Black Pepper to taste
  • 1 tsp garlic powder
  • 3 or 4 small zucchini sliced lengthwise
  • 24 oz of low fat or 1% cottage cheese 
  • 1 jar of spaghetti sauce
  • Non fat or low fat mozzarella cheese
  • Side note:  The Italian blood in me just cant use a jar of spaghetti sauce.  I made my own homemade sauce, which you can do too!  Hint....fresh ingredients are key!! (fresh basil, garlic and parsley) 
 Directions:
  • Preheat Oven to 350 degrees
  • Combine onion, ground turkey, salt, pepper, garlic powder in a skillet and brown turkey until no longer pink.
  • Layer Zucchini in the bottom of your pan, then spread a layer of cottage cheese, follow that with a layer of ground turkey mixture, spread a layer of sauce on top.
  • Repeat this over again.  Then layer one final row of zucchini on top and cover with sauce and a little sprinkle of mozzarella cheese.   


  • Cover with foil and bake in the oven for approximately 1 hour.
  • Remove the foil and continue to bake for 10 more minutes then remove from oven and let stand for 10 minutes.   




  • Yes it will be a little bit runny due to the water in the zucchini, sauce and the cottage cheese.  I used a slotted spoon to scoop out the lasagna which allows the liquids to stay in the dish.

Italian Style Stuffed Chicken

Italian Style Stuffed Chicken Breast

21 Day Fix Approved!!

Ingredients:
- 4 skinless chicken breasts
- provolone cheese sliced
- fresh tomato
 -fresh basil
- oregano dry
- parsley dry
- balsamic vinegar
- salt, pepper
- large toothpicks



Directions:
- place chicken breasts on a cutting board and cover with plastic
- pound chicken until flat
- place slices of provolone on top of chicken
- add tomato and basil on top
- sprinkle dry spices 
- drizzle balsamic vinegar 
- roll chicken and secure with toothpicks
- top off with more spices and balsamic
- bbq on the grill until chicken is cooked through
 Oven:
- brown the chicken in the pan after it is rolled
- bake at 400 for 30 minutes



Mama Misty Pasta


Fix Portions: 1 yellow, 1 green, ½ red, ⅓ blue


Ingredients:
  • 1 box whole wheat or whole grain pasta
  • 4 links Italian sweet turkey sausage (to spice it up, add a pinch of red pepper)
  • 1 container baby portobello mushrooms
  • 1 cup sun dried tomatoes (tip: dried tomatoes in produce isle...no oil!)
  • 3/4 bag of spinach leaves
  • 1 cup shredded mozzarella cheese
  • ⅓ cup milk (optional...I just used a little extra virgin olive oil..EVO)


     

    Directions
    1. Cook pasta according to package instructions
    2. In a skillet, saute all vegetables with EVO. Season with salt, pepper and garlic powder. Once tender, remove from pan, and cover with foil to keep warm.
    3. Remove the sausage from its casings and brown the meat in the skillet.
    4. Add the cooked noodles and vegetables to the sausage. Mix with remaining oil left in pan.
    5. Stir in shredded mozzarella until the cheese melts.
    6. Use your green container (or 1 cup measuring cup) to portion out each serving. Enjoy!



My 21 Day Fix Journey

Yep, it's official I have started my 21 Day Fix journey!! I am extremely excited to share with you my weekly progress and meal plans. I am going all in with this program, giving it 100%, and not missing one workout along the way.


My main goal for the 21 Day Fix is to tone up, build a strong core and lose pounds. I still have about 10 pounds that I would love to lose, but I never focus on the scale but instead in how I feel and how my clothes fit. Seriously, throw that scale out!!


When I first opened the box, I about fell over thinking...HMMM, I am going to starve!!  SO WRONG!  After reading the booklet that came with the program, I realized I get to EAT ALL THIS AND MORE!  Depending on your current weight, you get to eat from each container several times a day.  For me, I get to eat from the red container 4 times....THANK GOD!! 

I drink Shakeology every day.  It gives me the ENERGY I need, curbs my appetite and keeps me from munching on the wrong foods. Shakeology is WONDERFUL!  Its great to just grab on the go!
 The 21 Day Fix program is 21 days, 7 days a week and only 30 minutes.  The workouts are a combination of cardio, weights for upper and lower body, yoga and pilates.  It also includes an additional 10 minute ab routine.  I love how the workouts make me feel.  Its works the entire body.  I am seeing muscle forming in my arms, legs and abs....LOVE IT!!

The first week, I LOST 4 POUNDS!!  I could not believe it! It was so simple too. My challenge group has had great success as well.  Let me just tell you, this program is perfect for EVERYBODY!  There is a modifier in each workout for those that may benefit.  I wake up each day excited to work out....WHY?  Its fun, feels good and most of all, I LOVE THE RESULTS!!
