Mamas Meatloaf

This is guaranteed, one of the BEST meatloaf dinners you will ever make!!  Some meatloaves taste like a hamburger, but not this recipe! Its the PERFECT blend of ingredients to give you that delicious MAMA MEATLOAF taste!!!  The mozzarella cheese will just MELT in your mouth! One piece won't cut it, you will definitely want seconds!!!

Bake at 425, 1 hour

1 1/2 lbs low fat ground beef or ground turkey
          (I buy mine from the Jewel. They sell a meatloaf package...half beef, half pork)
1 egg
1 onion sauteed
1 c. milk
1 c. bread crumbs
1 tbsp Worcestershire sauce
sea salt and pepper to taste
mozzarella cheese (to stuff meatloaf)
1.  Mix the ground meat, egg, milk, bread crumbs, Worcestershire sauce, salt, pepper in a mixing bowl. 
2.  Saute onions in a pan.  Add onions to the meat mixture.
3.  Pour mixture into a baking pan.
4.  Divide the meat down the middle.  Stuff with mozzarella cheese.
5.  Cover the cheese with the meat mixture.
6.  Cover the pan with tinfoil and place in the oven on 425 for 45 minutes.

7.  While meatloaf is in the oven....
In a separate bowl, make the sauce to pour over the meatloaf. 
         - 2 tbsp brown sugar
         - 2 tbsp mustard
         - 1/3 c ketchup

8.  After 45 minutes, take the meatloaf out of the oven.
     Pour the sauce mixture over the top of the meatloaf.
     Add a sprinkle of brown sugar on top if you desire.
     Cook another 15 -20 minutes in the oven without the tinfoil.

This meal goes great with a potato and vegetable!!

Mini Egg Sandwiches

Mmmmm....good! This is the perfect clean meal whether it be for breakfast or dinner!  My kids love it!!  Not only is it delicious, but it is SUPER EASY to make.  With 3 ingredients and 20 minutes of bake time, you will be in and out of the kitchen in no time with NO MESS!!  This is a great breakfast with waffles or toast and fruit.  Make it for that relaxing Saturday or Sunday with your family!!

- eggs
- turkey bacon
- shredded cheese

1.  Spray muffin tin.
2.  Wrap each cup with a slice of turkey bacon.
3.  Crack an egg inside each.
4.  Sprinkle sea salt and pepper (bacon can be salty, salt is optional)
5.  Add a pinch of cheese. 

*For crisper bacon, I put 6 pieces in the microwave for 50 seconds. Then placed them in the tins. This made the BACON CRISPY!!

*Feel free to add vegetables for a veggie egg sandwich! I put spinach in mine...yum!!

Bake at 425 for 25 min.
