BBQ TIME!!!  With the gorgeous weather here, I wanted Todd to grill for dinner tonight. Since we like to "eat clean", I use ground turkey versus beef.  For a different twist, we added taco seasoning to our turkey burgers to give it some "kick"!! Since time was limited, instead of making my own salsa, I bought the homemade deli salsa and guacamole at the grocery store.  It was so DELICIOUS!!! The kids LOVED it too!!!


  • 1lb Ground Turkey
  • 1 tbsp Taco Seasoning
  • 1 tbsp Garlic – minced
Combine the above ingredients. Divide the turkey mixture into four and shape into patties. Cook on each side about 3-4 minutes on the griddle.  Even better to BBQ!!

Top with the Fresh Salsa to serve. I used homemade salsa and guacamole from the Jewel Deli. It was quick, delicious and had some kick!!

Ummm....the word "like" would be an understatement. We "LOVED" this lasagna!!!! I grew up eating homemade Italian food, so I know what's good and what's not. This lasagna was a definite WINNER!!! Believe it or not, the carrots and celery give it that extra flavor. I also like the little bit of crunch that it adds. You cannot go wrong with this recipe! This is considered "clean eating" and you wouldn't know it if I didn't tell you. Try it!!!

21-Day Fix Portions:

1 yellow, 1 red, 1 green, 1 blue


  1. Whole wheat lasagna noodles (8 if you want 2 layers, 12 if you want 3 layers)
  2. 1 lb lean ground turkey
  3. 1½ jars pasta sauce
  4. 1 carton cottage cheese
  5. 1 8oz. package shredded mozzarella or Italian blend cheese
  6. ¾ cup real shredded parmesan cheese
  7. 1 egg
  8. 1 green container (combined) finely chopped celery, onion, carrot
  9. 1 clove garlic, finely chopped
  10. ¼ cup finely chopped parsley 
  11. seasonings: oregano, basil, sea salt, pepper 


    1.  Boil water for the noodles. Add a splash of extra virgin olive oil so the noodles don't stick.  Cook noodles according to the package instructions.

    2. Meanwhile, brown the ground turkey.  Season with oregano, basil, salt, pepper and remove from pan. 

    3. Add a drizzle of EVOO to the same pan. Saute vegetables and garlic until tender. 

     4.  Return the ground turkey to the pan. 
    5. Stir in pasta sauce and parsley and simmer until heated through.

     6. In a separate bowl, whisk the egg until well beaten.

     7.  Add the cottage cheese, 1 cup of the mozzarella and ½ cup parmesan. Stir to combine with the egg until everything is well blended.

    8. When the noodles are finished, rinse in colder water and pat dry.     
    9. Begin the lasagna layering process in a lightly-greased 13x9 pan: Sauce, noodles, cheese mixture, repeat.

    10. Once you have added the final layer, pour any remaining sauce over top. 

     Then sprinkle remaining 1 cup mozzarella and 1/4 cup parmesan on the top.

    11. Cover with foil and bake at 400 for 45 minutes. Remove the foil and continue cooking an additional 5 minutes or until the cheese on the top is bubbly.

Hawkeye Bites (I can't call them Buckeyes)

For those that know me, I live and breathe the Iowa Hawkeyes!! I am so proud of my Big Ten college! I think being a part of the dance team has a lot to do with it!! Most of you call this dessert buckeyes. Well not me.... I call them Hawkeye Bites!!! They are delicious and hit the spot...ENJOY!
-1 14oz can cannellini beans drained and rinsed
-1/2 cup unsweetened applesauce
-1/2 cup pumpkin puree
-2 Tb coconut oil
-1Tb vanilla extract
-1 cup peanut butter
-pinch of pink salt
-10 oz dark chocolate, melted (add coconut oil if needed)

-Line 2 baking sheets with wax paper
-Puree Cannellini beans in food processor.
-Add applesauce, pumpkin, coconut oil, and vanilla. Puree until completely smooth.
-Add peanut butter and pink salt. Puree until smooth.
-Scoop tablespoons of dough and roll into balls.
-Arrange on baking sheets and refrigerate for 15 minutes
-Take the dough balls out of the refrigerator and re roll smooth if needed. Place a toothpick in each ball and freeze for 30-45 minutes.
-Just before removing, melt the chocolate in a double boiler or microwave. (small increments of time in the microwave though to not burn the chocolate)
-One at a time, dip the dough ball 3/4 into the chocolate leaving a bit of dough showing so that it looks like a buckeye.

Store in the fridge until you are ready to eat them!
Makes 25-35 Hawkeye Bites!

OMG...Easy Crockpot Chicken Tacos

OMG....Easy Crockpot Chicken Tacos

 This taco recipe is SO EASY, it's embarrassing!! With literally THREE ingredients, you can make tacos in no time.  I made this the other morning before heading off to work.  Knowing that we had a busy evening with my kids' activities, I knew this would be the perfect, quick fix meal!! Oh and sooo delicious!!!

4 large chicken breasts 
1 jar salsa
1 packet of taco seasoning (optional)

 - Spray the crockpot and add chicken breasts.
- In a bowl, mix the salsa and taco seasoning together.
- Pour the salsa from the bowl on top of the chicken breasts.
- Cover and cook on low for 8 hours or until chicken shreds with a fork.

*You could add black beans and corn.
*Do brown rice bowls instead of tortillas.

Sweet Italian Sausage & Peppers

Sweet Italian Sausage and Peppers
 You can't go wrong with with Sweet Italian Sausage and Peppers!! This meal has a little bit of sweetness and some spice. I love the combination of the soft baked potato along with the crunchy peppers! This is a family favorite for sure!!

Serves 4
2 large potatoes, washed, dried, peeled and cut into large chunks
2 Peppers, seeded and cut into large chunks
1 Large Red or Yellow Onion, cut into large chunks
4 links of Italian Turkey Sausage, cut into thirds
4 or 5 Cloves of Garlic unpeeled
A few Tablespoons of Olive Oil
Sea Salt and Pepper to taste
1 Tsp of Oregano

(diced tomatoes are optional.....I decided not to use them)


 1) Preheat your oven to 450 degrees.

2) Add all of your ingredients besides the turkey sausage in a large roasting pan, make sure everything is in a single layer. 

3.) Toss to coat the veggies with the oil and seasoning.

4.)  Pop it in your preheated oven and roast the veggies for about 40 minutes making sure to toss them around half way through cooking.

5.) In a small bowl, toss together your sausage chunks with about 1 Tbsp of oil, scatter the sausage all over the top of the veggies and pop it back into the oven to roast for another 20 minutes or so or until the sausage is fully cooked through. 

Serve immediately!

 *Makes 24 servings.
1 cup chocolate or vanilla Shakeology
1 cup all natural peanut butter
   (or almond butter)
1 cup Quick Oats
1/2 cup raw honey

Combine peanut butter, oats, honey and Shakeology in a medium bowl.  Mix well with a spatula or by hand. Roll into small balls and flatten so it's shaped like a cookie.

Tip: You can add cinnamon. I placed mine in the refrigerator and ate them slightly chilled! Yummy!!
