Sweet Potato Home Fries
These sweet potato home fries are the perfect side dish! You may feel like you are cheating, but you're not! They are healthy and 21 Day Fix approved! I guarantee your kids will love them too!
 
Ingredients:
4 medium sweet potatoes
1 large onion (optional)
5 tsp. olive oil
black pepper
sea salt 

Directions:
1. Preheat oven to 450 degrees
2. Place tin foil on cookie sheet
3. Place sweet potatoes and onion (optional) on baking sheet
4. Drizzle olive oil, mix and spread across the baking pan
5.  Season with sea salt & pepper
6.  Bake for 22 minutes (stir half way)



Unstuffed Pepper Casserole

Unstuffed Pepper Casserole
Dinner was delicious tonight!!! So much easier when you can just throw it all in a casserole dish and bake!! My kids loved it and of course hubby approved! ❤️

Ingredients:
- 1 lb ground turkey
- 2 peppers
- 3 cloves garlic, minced
- 2 cups cooked brown rice
- 1 jar (24 oz) Pasta Sauce or (21 Day Fix Cookbook sauce)
-  1 1/2 cups Shredded Cheese

  Directions:
 1.  Heat oven to 350 degrees
 2. Brown meat with peppers and garlic in large skillet, drain.
 3. Stir in rice, pasta sauce and 3/4 cup cheese.
 4. Spoon into a 2-qt casserole sprayed with cooking spray
 5. Top with remaining cheese.
 6. Bake 25 min or until heated through
