Sweet Potato Brownies


Two of my favorite things in the world are sweet potatoes and chocolate. And guess what? When you combine the two, they create the most decadent and guilt-free brownies ever! 

I decided to put a healthy spin on the classic chocolate-lovers treat and I must say that mine are just as delightful. Rich in flavor, but also packed with healthy fats, fiber, and Vitamin A! To cook the sweet potato, pierce it with a fork, wrap in a damp paper towel and place in microwave for 3:00 minutes. Cook until soft.  I hope you like these as much as I do!

Cook Time: 25 min


  • 3 eggs
  • ¼ cup maple syrup
  • ½ cup melted coconut oil
  • ¾ cup almond meal
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1 pinch sea salt
  • 1 cup cooked sweet potato
  • 1/4 cup chocolate chips for topping


  1. Pierce potato with a fork and wrap in a damp paper towel. Cook sweet potato in the microwave for 3:00 minutes or until soft.
  2. Using an electric hand mixer or stand mixer, whisk together the eggs, syrup, and coconut oil until well combined.
  3. In a separate bowl, combine almond meal, cocoa powder, baking powder, and salt.
  4. Slowly add the dry ingredients into the wet.
  5. Add the sweet potato and mix until well combined.
  6. Pour brownie batter into baking pan and bake for 22-30 minutes, or until an inserted toothpick comes out clean. (I have a super hot oven that cooked them in 22 minutes!)
  7. Remove from oven, let cool for a few minutes, top with chocolate chips, then let the masterpiece cool completely before cutting!
  8. Try not to eat the entire pan at once!

Program Overview

  • There are 3 phases of workouts over the course of 13 weeks. 
  • In total there are 97 days of workouts because you get Sundays off as a rest day.
  • The workouts range from 45-60 minutes, and as always, there is a modifier.
  • It utilizes a timed nutrition plan to produce amazing results.
  • Shakeology, Energize, and Recover are incorporated to help fuel and replenish the body.
  • Equipment required: dumbbells, strength bands, sliders.

Nutrition Plan

80 Day Obsession follows a timed nutrition plan to optimize muscle performance and recovery.
You’ll get to eat small frequent meals- which means you'll never go longer than 3 hours without eating (yay!). More importantly, you'll have a 6-hour workout block. 
You'll have a preworkout meal one hour before you work out then you’ll drink your Energize 15-20 minutes before your workout. 
Then you’ll have your post-workout Recover within an hour of your workout and enjoy your post-workout meal within 2 hours of your workout. After that you'll eat every 2.5 to 3 hours {my kinda schedule!}!

This is a great way to get comfortable with the equipment so you can ROCK the exercises in January and NOT have an EXTRA 10 lbs to lose when you start in 2018!
We'll begin on December 20th with A Little Obsessed (which is a mini version of the actual program, 80 Day Obsession) and focus on clean eating while enjoying the holiday festivities! We'll complete A Little Obsessed from December 20th (when it becomes available on Beachbody On Demand) to January 14th when 80 Day Obsession officially launches! You will be totally prepared to rock it!
Option 2: 80 Day Obsession ONLY (prep week begins January 8th, workouts begin January 15th)
If you aren't ready to get started now, join us in January for the official launch! We'll kick things off with a week of meal planning, goal setting, and more on January 8th then begin the program when it launches on the 15th!
*Both groups will last the duration of the entire program!

In these groups each participant MUST commit to:

  • Showing up daily and participating in the group.
  • Following the timed nutrition plan for your body type and goals.

Slowcooker Kale Soup

Slowcooker Kale Soup for dinner tonight!! So delicious and kids loved it too!! 🥣❤️
2 boxes vegetable broth
2 (14.5 ounce) cans white beans, rinsed and drained
2 cans diced tomatoes drained
1/2 onion, unchopped
3 cloves whole garlic cloves
2 teaspoons kosher salt
1 teaspoon ground black pepper
2 bunches kale, torn into small pieces
2 carrots, chopped, or more to taste
1/4 teaspoon dried oregano
*I added Wylers chicken powder for my flavor!

Combine the vegetable stock, beans, onion half, garlic cloves, salt, black pepper in a slow cooker; cook on Low for 8 hours.
Remove and discard the onion and garlic.
Switch slow cooker to 'high' setting. Add the pasta to the stock mixture. Stir the kale, celery, carrots and chicken powder/cubed into the soup; cook until the carrots are tender, about 30 minutes to 1 hour more.

~ Bob Evans Pork Sausage
~ 9 eggs beaten slightly
~ 3 c milk
~ 1 1/2 tsp dry mustard
~ 1 tsp salt
~ 3 slices white bread cubed
~ 1/2 c cheddar cheese
~ 1/2 c swiss cheese
*Feel free to add any veggies you love!
Brown sausage....drain
Combine next 4 ingredients in bowl
Add sausage
Pour in pan 13x9 inch pan
Add bread cubes and cheese
Cover and have it sit overnight in the refrigerator.
Next day, bake for 1 hour at 425 degrees
