 Loaded Baked Potato

Ingredients:
- Potato
- Turkey Breast
- Shredded Cheddar Cheese
- Broccoli   
- sea salt (optional) 


Directions:
I cook mine the super, easy way...microwave! First, clean the potato.  Poke holes with a fork.  Wrap in a wet paper towel and cook for 2 minutes or until soft.  Cook broccoli in microwave separately.  When finished, slit potato in half and layer with warm turkey (or any meat), shredded cheddar cheese, and broccoli.  You could also substitute the meat with cottage cheese. (1 red)
1 yellow, 1 Red, 1/2 Blue, 1 green

 Blueberry Oatmeal 1 Yellow
 Ingredients:
½ cup of 100% whole wheat quick oatmeal

1 cup of water
1 container full of either fresh or frozen blueberries

Directions:  Place all three ingredients in a glass bowl and cook for recommended amount on the back of the oatmeal box.  Depending on if you use fresh blueberries I would only add those at the end but if frozen place in the bowl before placing in the microwave.  If your someone that is short on time (like myself) making this recipe in a large batch and then quick reheat is a saver on time as well.

French Toast Pancakes

BREAKFAST:

French Toast Pancakes
Makes 10-12 pancakes
Serving Size: 3-4 pancakes
21-Day Fix Portion (per serving): 1½ red, 1 yellow
Ingredients
·         1 cup egg whites
·         1 cup fat free cottage cheese
·         1 cup whole grain oats
·         1 tbsp cinnamon
·         1 tsp raw sugar or stevia
·         1 tsp vanilla extract
Directions
1.      Combine all ingredients in a blender and puree until smooth (about 30 seconds)
2.      Pour onto a lightly greased griddle or griddle pan (I use a very small amount of real, unsalted butter)
3.      Cook until lightly brown on both sides
4.      Drizzle with 1 tsp of 100% pure maple syrup
BREAKFAST:  Southwestern Egg Wrap
 Ingredients:
-2 eggs
- Shredded Cheese
- Whole Wheat Toritillas
- Salsa
- add avacado as a bonus!



Italian Soup!

Italian Soup!

Mangi! Mangi! .....Cooking up some of my ITALIAN SOUP!! Its one of my faves and so comforting during the winter. The sweet Italian turkey gives this soup awesome flavor!! Clean eating too!

Ingredients:
1 lb sweet Italian turkey sausage (take out of casing)
1 medium onion, chopped
2 large cloves of garlic, crushed
1 can (28 oz) whole tomatoes 
1 can (46 oz) chicken broth
1/2 lb escarole, cleaned and coarsely chopped
1 cup uncooked small bowtie pasta
2 cans (15 oz) cannellini white beans (or substitute 1 can w/ red beans)

Directions:
- In a large soup pot, over medium heat,  brown sausage breaking up large pieces.
- Add onion and garlic, saute until onions are tender. 
- Stir in tomatoes and their liquid (break up tomatoes). 
-Add broth
-Bring to a boil.
-Add escarole and simmer for 15 minutes.
- Meanwhile....cook pasta, drain. Drain beans. Add pasta and beans to soup.
- Add salt, pepper if desire.You can also add fennel seeds for an extra kick.
-Heat through.

*This soup is better the second day after it sits in the fridge over night. Tastes great with parmesan cheese!

Quino Taco Bake!

QUINOA TACO BAKE!!!

This is a clean eating meal that the entire family will love! Its delicious, low in calories, easy to make and a recipe that you will repeat over and over!! You can refrigerate or freeze any leftovers for another day!! Give it a try and comment below!!

 The containers are for those on the 21 Day Fix program. If you are not following the 21 Day Fix, you can still make this recipe!!  Just ignore the colored container that I listed. :)

INGREDIENTS:
1lb Lean Ground Turkey – 4 RED containers
1 cup uncooked Quinoa – 4 YELLOW containers
1 14oz can Rotel
No Salt added Tomato Sauce – about 4oz
1 Large Zucchini Squash – 2 GREEN Containers
1 cup Shredded cheese – 4 BLUE Containers
2-3 TBSP Chili Powder
2-3 Tsp Cumin
3 Garlic Cloves minced
Cilantro chopped fresh



DIRECTIONS:
1. Preheat oven to 350 degrees. Lightly spray 9×13 glass baking dish with olive oil and set aside.


2. Prepare quinoa as directed.


3. While quinoa is cooking, spray skillet and place on med-high heat. Add garlic and ground turkey. Break up meat and add your Chili Powder and Cumin as it browns. Before all the way cooked through, add your can of Rotel (I leave the juices in). Adjust seasonings to taste.

NOTE: You could certainly use fresh onions, jalapenos and tomatoes if you wish.

4. Add 2 green containers of shredded zucchini squash to your meat mixture. Allow to simmer until the veggies are tender.


5. Remove from heat and add your quinoa, tomato sauce, and 1/4 cup shredded cheese (1 blue). Mix together.


6. Pour mixture into prepared baking dish. Top with cilantro and remaining Cheese. (3 blue containers)


7. Bake uncovered 10-15 mins until cheese is melted.


8. Divide into 4 equal portions.



**Notes...if you have 21 Day Fix Containers:
Makes 4 servings. Each serving equals 1 RED, 1 YELLOW, 1 GREEN and 1 BLUE container.

Transformation of the Day!

Yep, its ME!!  I am very proud of my progress! I feel great, I have more energy and CONFIDENCE than ever before!!  Since my journey with Beachbody, I now have the courage and confidence to do things that I wouldnt have done otherwise.  Todd and I participated in the Foam Glow this past August and ran a 5K.  Not only did it feel good to support a good cause, but we had a BLAST!

Todd and I spent our 8 year wedding anniversary at a resort in Wisconsin. It was the first time since having kids that I felt comfortable in my bathing suit. It was so nice not to have to hide  behind my towel the entire day at the pool.

I also had my 20 year High School Reunion last August.  I finished a round of the 21 Day Fix beforehand and I felt amazing!!  My husband bought me a brand new outfit for my reunion that made me feel like a Hot Mamma!

This is not a one time fix for me.  This is a lifestyle change.  I am now a better mom and wife.  My life is at its best because I FEEL my best!!

 WHAT EXACTLY IS A CHALLENGE GROUP?
Once you choose your workout program, I will assign you to a Challenge Group.  A challenge group is a small team that is formed by me as your coach.  We are a private page on Facebook.  Each day, you would workout at home at a time that is best for you.  Then you would log onto our team page and post your workout?  Why?  This is what keeps you accountable.  The purpose of the team is to get support from me as your coach.  Each day I will motivate you, keep you accountable and give nutrition tips.  You also converse with the other teammates each day of your challenge.  Most of all...IT IS FUN!!

BREAKFAST:  Southwestern Egg Wrap
 Ingredients:
-2 eggs
- Shredded Cheese
- Whole Wheat Toritillas
- Salsa
- add avacado as a bonus!



LUNCH: Shrimp Salad....so yummy!!
Ingredients:
Shrimp, avacado, tomato, lime/cilantro and seasonings 

 DINNER:
 Clean Eating Mexican Lasagna



Made this last night for dinner and it really hit the spot.  My 6 year old daughter said that I should make this meal every night, it was so good!  It's definitely not the cleanest meal out there but it is a special treat.   Make sure to watch your portion sizes because with this meal its easy to go overboard!




 Ingredients:


  • 1lb lean ground chicken (or turkey)
  • 1 cup of shredded cheddar cheese (low fat)
  • 1 cup of cottage cheese
  • 1 cup of clean salsa
  • 1/2 cup of black beans
  • 1 small onion, chopped
  • 1 tbsp taco seasoning
  • 4 low carb whole wheat tortillas, cut into strips or use whole (I bought mine at Jewel)
  • corn (optional...I used frozen)
  1. Preheat over to 400 degrees.
  2. In a skillet pan sprayed with nonstick spray, cook the ground chicken and onion until brown.  Once cooked turn to low and add salsa, black beans and taco seasoning and mix together.  Set aside.
  3. In a bowl, combine 3/4 cup of the cheddar cheese and the cup of cottage cheese.
  4. In a baking dish sprayed with nonstick spray, line the pan with 1/2 of the tortilla strips.  Scoop 1/2 of the meat mixture on top and spread out, covering the tortillas.  Then add 1/2 of the cheese mix on top of the meat and spread.  Repeat the layers again with remaining strips, meat, and cottage cheese.  I sprinkled frozen corn. Top with remaining cheese.
  5. Cover and bake for 40 minutes and enjoy!  350 calories per serving. 

    SNACK:
This is a personal favorite of mine!  You cannot go wrong with chocolate and peanut butter!

Transformation Of The Day!
 Giselle was active and athletic, but she was eating portions that were out of control. She chose 21 Day Fix to help her get the body she always wanted.
