Chicken Noodle Soup....21 Day Fix Approved!

 Living in Chicago in the winter requires a nice, HOT SOUP for a meal!! This recipe definitely hit the spot!! Adding the chicken powder gave it a lot of flavor.  You can add whole wheat crackers for some crunch!  Your family will love it and it's great for lunch the next day!

 Ingredients:
- 2 Large Chicken Broths (32 oz each)
- 3  chicken breasts 
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp Wylers Chicken Powder
- 2 cups whole wheat pasta, bow tie (uncooked)
- salt/pepper to taste
- tbsp olive oil

Directions:
1.  Add the onion, carrots, parsley, chicken, celery, garlic, olive oil, chicken broth salt, pepper, chicken powder to your crockpot. Cook on low for 7 hours or 4 hours on high.

2. Remove chicken and either cut into pieces or shred with a fork. Add chicken back to the crockpot and add pasta (uncooked). Cook for another hour on high or until noodles are cooked.
*If you don't want to wait 1 hour for the noodles to cook in the crockpot, you can cook the pasta on the side and just throw in the crockpot. 

3. Garnish with parsley. 


21 Day Fix serving = 1/2 green container, ½ red container, 1/2 yellow

Deconstructed Cabbage Rolls


I made this tonight and my family ate it up like no other! I love cabbage rolls, but they can take too much time to make.  This recipe was fast to prepare and limited ingredients were needed.  My family and I were all surprised at how tasty this meal was.  Everyone had seconds! I highly suggest sprinkling parmesan cheese on top. 

Ingredients:
2 lbs ground turkey
1 tbsp olive oil
1 large onion (chopped)
1 garlic clove - mined (or more if you wish)
1 cabbage (chopped)
1 large can (28oz) low sodium diced tomatoes
1 can tomato sauce (8 oz)
3/4 cup water
salt/pepper to taste

Directions:
1. Brown meat, onion and garlic in olive oil
2. Add cabbage, tomatoes, sauce, 1/2 cup water (stir)
3.  Add salt and pepper (I use sea salt)
4  Cover and simmer for 30 minutes until cabbage is tender
 *Note...it may look like there is too much cabbage.  It will eventually wilt.  Give it time.  The cabbage will also release water.

Diamond Coach....for real??  Those were my thoughts when I found out that I advanced rank from Ruby to Diamond in just one week.  For those that have no idea what I am talking about, I became a Beachbody Coach on April 9, 2014.  I decided to become a coach after having such amazing results from both P90x3 and Shakeology in just 12 short weeks.  The experience of being in a challenge group was life changing for me, it gave me back my life I was excited to wake up and workout every morning.  I loved the fact that I was part of a team of men and women that were encouraging one another each day to strive for their fitness goals alongside our amazing coach, Kristina. Todd and I learned how to make clean eating recipes.  We realized that clean eating was delicious and it was going to be a new lifestyle, not only us, but the entire family.  LIFESTYLE.....yes....it's not a quick workout, diet and be done.  It became a lifestyle change for us and there is no turning back.
