Slow Cooker Shredded BBQ Chicken

This sandwich will MELT in your MOUTH!  Its a family FAVORITE and leaves my kids wanting MORE! 
This dish is awesome as a left over too!!

Ingredients
  • 1 (12 ounce) bottle barbeque sauce
  • 1/2 cup Italian salad dressing 
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce     

Directions:
  1. Place chicken in a slow cooker. In a bowl, mix the barbecue sauce, Italian salad dressing, brown sugar, and Worcestershire sauce. Pour over the chicken.
  2. Cover, and cook 3 to 4 hours on High or 6 to 8 hours on Low. 
    3. The last 30 minutes, shred chicken in crock pot with a fork. Let cook for 30 more minutes.  May want to add cornstarch to thicken.

     

Spicy Buffalo Tailgate Trail Mix

Football season calls for tasty snacks! Nothing says football watching party more to me than spicy buffalo chicken wings and a big bowl of chips. Well, why not mix the two together in one easy to make treat? Once you try this amazingly simple and spicy buffalo trail mix recipe, you’ll be hooked!

Step 1

Melt butter and mix in the hot sauce and seasoning salt. Add the cereal, pretzels and nuts in a large microwave safe bowl and pour the sauce over the ingredients and stir.

Step 2 

Microwave for 2 minutes then spread it out on a baking sheet.

Step 3


Spread out on a baking sheet and broil on high for 5 minutes, remove and stir and place back in oven for another 3-5 minutes until crispy.

Step 4


Let cool and serve up in cute cups!

 

Mexican Stuffed Shells



Aaaaa-mazing!!!! My kids loved this meal tonight. Even the neighbors came over and had to try some. They raved about this dish!!! Mexican stuffed shells are delish!! 
Ingredients:
1 lb. ground turkey
1 package low-sodium taco seasoning
4 oz. low fat cream cheese
12-15 jumbo pasta shells
1 cup salsa
1 cup taco sauce

Oikos plain yogurt 
Shredded Cheese
2 green onions (optional)



Directions: Preheat oven to 350°. In a frying pan cook ground beef; add taco seasoning and prepare according to package directions.   

Add cream cheese, cover and simmer until cheese is melted. Blend well. Set aside and cool completely.   
 While ground beef is cooking, cook the pasta shells according to directions; drain. Set shells out individually on cutting board/baking sheet so that they don’t stick together.

Pour salsa on bottom of 9×13 baking dish.  Stuff each shell with the meat mixture. Place shells in 9×13 pan open side up. 

Cover shells with taco sauce.  Cover with foil and bake for 30 minutes. 
After 30 minutes, add shredded cheese and bake for 10-15 more minutes.   Serve with Oikos yogurt on top and/or more salsa. 


Egg Hash

Ingredients:
- 2 eggs
- 1/2 sweet potato
- 1/2 onion
- 2 slices deli ham

Directions:
First, wrap potato around a damp paper towel. Cook sweet potato in the microwave for 3 minutes. 

Spray pan with olive oil. Cook onions on medium heat. Add diced ham. Next, add cooked sweet potato and mix together. Place on  a plate.

Then, top the hash with 2 cooked eggs over easy.
