OMG talk about AMAZING!!!  Who does not like a Reeses Peanut Butter Cup??!!  When we just need a peanut butter and chocolate fix, this is the way to go!!!  It's not exactly the best nutritional value, but it beats eating trans fat and empty calories.  At least you get some healthy benefits of Shakeology and peanut butter to curb your cravings!!!  Enjoy!!!!

Mexican Lasagna

Clean Eating Mexican Lasagna


Made this last night for dinner and it really hit the spot.  My 6 year old daughter said that I should make this meal every night, it was so good!  It's definitely not the cleanest meal out there but it is a special treat.   Make sure to watch your portion sizes because with this meal its easy to go overboard!



 Ingredients:

  • 1lb lean ground chicken (or turkey)
  • 1 cup of shredded cheddar cheese (low fat)
  • 1 cup of cottage cheese
  • 1 cup of clean salsa
  • 1/2 cup of black beans
  • 1 small onion, chopped
  • 1 tbsp taco seasoning
  • 4 low carb whole wheat tortillas, cut into strips or use whole (I bought mine at Jewel)
  • corn (optional...I used frozen)
  1. Preheat oven to 400 degrees.
  2. In a skillet pan sprayed with nonstick spray, cook the ground chicken and onion until brown.  Once cooked turn to low and add salsa, black beans and taco seasoning and mix together.  Set aside.
  3. In a bowl, combine 3/4 cup of the cheddar cheese and the cup of cottage cheese.
  4. In a baking dish sprayed with nonstick spray, line the pan with 1/2 of the tortilla strips.  Scoop 1/2 of the meat mixture on top and spread out, covering the tortillas.  Then add 1/2 of the cheese mix on top of the meat and spread.  Repeat the layers again with remaining strips, meat, and cottage cheese.  I sprinkled frozen corn. Top with remaining cheese.
  5. Cover and bake for 40 minutes and enjoy!  350 calories per serving.

I always have a sweet tooth a night while relaxing and watching a show. I came across this recipe and instantly had to try it! Anything with yogurt, peanut butter and chocolate I am game! It is called clean eating cookie dough yogurt!!!  AMAZING!!!  I would not eat this every night, but this is a perfect treat to replace your bowl of ice cream or DQ blizzard.  Let me know when you try it and what you think!!

Ingredients
➡1 plain Greek yogurt, 1 tbsp peanut butter, 1 tbsp honey, 1/4 tsp vanilla, pinch of sea salt, 1 tbsp mini chocolate chips.


Directions:
➡Combine Greek yogurt with the peanut butter, honey, vanilla and sea salt. Mix until smooth. Top with mini choc chips and enjoy!!!

Cilantro Lime Chicken Tacos

Cilantro Lime Chicken Tacos
(crockpot style)

This meal is super easy and super delicious! Your family will eat it up! Hopefully you have leftovers because they make a good lunch the next day. Also a quick, inexpensive meal if you have company coming over!



 Ingredients:
1 lb. boneless skinless chicken breasts  
 juice from 2 limes
1/2 cup of cilantro
1 packet of taco seasoning
1 teas. onions

1/2 cup water

*1 jar of salsa (optional) If so, do not add water.





Add every single ingredient to the crockpot. This could be cooked on low all day, or you could set the crockpot to high and cook for four(ish) hours. Once the chicken is cooked, use a fork to shred it, and stir well.


Spoon chicken into soft taco tortillas. Top with cheese, sour cream, salsa, and tomatoes. Garnish with a few lime wedges......
