Italian Soup!

Mangi! Mangi! .....Cooking up some of my ITALIAN SOUP!! Its one of my faves and so comforting during the winter. The sweet Italian turkey gives this soup awesome flavor!! Clean eating too!

Ingredients:
1 lb sweet Italian turkey sausage (take out of casing)
1 medium onion, chopped
2 large cloves of garlic, crushed
1 can (28 oz) whole tomatoes 
1 can (46 oz) chicken broth
1/2 lb escarole, cleaned and coarsely chopped
1 cup uncooked small bowtie pasta
2 cans (15 oz) cannellini white beans (or substitute 1 can w/ red beans)

Directions:
- In a large soup pot, over medium heat,  brown sausage breaking up large pieces.
- Add onion and garlic, saute until onions are tender. 
- Stir in tomatoes and their liquid (break up tomatoes). 
-Add broth
-Bring to a boil.
-Add escarole and simmer for 15 minutes.
- Meanwhile....cook pasta, drain. Drain beans. Add pasta and beans to soup.
- Add salt, pepper if desire.You can also add fennel seeds for an extra kick.
-Heat through.

*This soup is better the second day after it sits in the fridge over night. Tastes great with parmesan cheese!
