Deconstructed Cabbage Rolls
I made this tonight and my family ate it up like no other! I love cabbage rolls, but they can take too much time to make. This recipe was fast to prepare and limited ingredients were needed. My family and I were all surprised at how tasty this meal was. Everyone had seconds! I highly suggest sprinkling parmesan cheese on top.
Ingredients:
2 lbs ground turkey
1 tbsp olive oil
1 large onion (chopped)
1 garlic clove - mined (or more if you wish)
1 cabbage (chopped)
1 large can (28oz) low sodium diced tomatoes
1 can tomato sauce (8 oz)
3/4 cup water
salt/pepper to taste
Directions:
1. Brown meat, onion and garlic in olive oil
2. Add cabbage, tomatoes, sauce, 1/2 cup water (stir)
3. Add salt and pepper (I use sea salt)
4 Cover and simmer for 30 minutes until cabbage is tender
*Note...it may look like there is too much cabbage. It will eventually wilt. Give it time. The cabbage will also release water.
