Ground Turkey & Brown Rice Taco Bake
I absolutely LOVE mexican food, so I make this dish at least three times a month! My kids love it and it's guilt free! Give it a try, I bet your family will love it!

1 Red, 1 Green, 1 Yellow, 1 Blue, 1/4 Purple
Ingredients:
1 cup cooked brown rice
1 yellow onion, chopped
3 cloves garlic, minced
1/2 small can of Jalapeno, chopped (add more if desire)
1 lb ground turkey
2 tsp lime juice
2 T Chili Powder
1 tsp Oregano
1/2 tsp Thyme
1/3 cup cilantro, chopped
1 cup Shredded Cheddar Cheese
1 (15 oz) can tomato sauce (low sodium)
Hot Sauce (to taste-optional)

Instructions:
1. Preheat oven to 400. Spray a 9 x13 pan, set aside
2. Boil brown rice, set aside
3. Saute onion,garlic & jalapeno over medium heat for about 1 minute

4. Add ground turkey and cook for about 5 minutes
5. Add Peppers and cook until meat is  no longer pink.
6. Add lime juice, cilantro & seasonings. Stir.
7. Remove from heat - add rice, tomato sauce, 1/4 cup cheese  to the skillet and stir well.
8. Pour mixture into baking dish. Top with remaining cheddar.

9. Cover with foil and bake for 20 minutes.
10. Remove foil & bake an additional 10 minutes or until cheese is melted.
11. Remove from oven & let cool for 5 minutes
